Characteristics
Because of its particular production process, Forest honeydew is not produced and thus not available all year long. In fact, its production depends on the given humidity conditions on the certain forest. After a very dry spring with a very low atmospheric humidity the result is amazing intensive malty and amber color very thick consistency and an overcooked jam taste on the pallet with a cedar wood aroma.
The diastase number of 38,3! It is exceptionally height and places this honey up on the list of the healthiest honey in the world.
